Quick and Easy Meals to Make with Your Family

It’s summer and now is a good time to make fun, quick and easy meals with your little ones! Creating food with your youth not only keeps them occupied but can also be used as quality time with the entire household.

Classic Stuffed Shells

Ingredients

  • Kosher salt and freshly ground black pepper
  • 24 jumbo shells
  • 1 (10-ounce) package chopped frozen spinach, defrosted and squeezed dry
  • 1 c. whole-milk ricotta
  • 2 cloves garlic, grated
  • 1 tsp. lemon zest
  • 1 tsp. dried oregano
  • 1 (8-ounce) block whole-milk mozzarella, grated (about 2 cups) and divided
  • 4 1/2 oz. Pecorino, grated (about 3/4 cup) and divided
  • 1 (24-ounce) jar marinara sauce

Directions

  1. Step 1: Preheat oven to 350ºF. In a large pot of salted water, cook noodles according to package directions. Combine spinach, ricotta, garlic, lemon zest, oregano, 1 1/4 cups mozzarella, and 1/2 cup Pecorino in a bowl. Season with salt and pepper. 
  2. Step 2: Pour 1 cup marinara in the bottom of a 9- by 13-inch broiler-proof baking dish. Stuff filling into shells, dividing evenly (about 1 heaping tablespoon each), and place on top of marinara. Top with remaining marinara, 3/4 cup mozzarella, and 1/4 cup Pecorino. Cover with aluminum foil, and bake until sauce is bubbling and filling is warm, 30 to 35 minutes. Uncover and switch the oven to broil. Broil until cheese is golden brown, 2 to 3 minutes. Let rest 5 minutes before serving.

Tuna Melt

Ingredients

For tuna salad:

  • 2 (5-ounce) cans chunk white tuna, drained
  • 1 celery stalk, chopped
  • 1/3 c. chopped fresh flat-leaf parsley
  • 1/3 c. chopped fresh dill
  • 2 scallions, thinly sliced
  • 1 tbsp. fresh lemon juice
  • 1/2 c. mayonnaise
  • 1/4 c. sliced cornichons
  • 2 tbsp. pickle relish
  • 1 tbsp. Dijon mustard
  • Kosher salt and freshly ground black pepper

For sandwich:

  • 8 slices sourdough bread
  • 1/4 c. mayonnaise
  • 4 oz. extra-sharp Cheddar, grated (about 1 cup)
  • Kosher salt and freshly ground black pepper

Directions

  1. Step 1- Make Tuna Salad: Combine tuna, celery, parsley, dill, scallions, lemon juice, mayonnaise, cornichons, pickle relish, and mustard in a bowl. Season with salt and pepper. 
  2. Step 2- Make a Sandwich: Place bread on a work surface and spread 1 tablespoon of mayonnaise on each. Turn 4 slices over, and top with Tuna Salad and Cheddar, dividing evenly. Season with salt and pepper. Sandwich with remaining bread, and mayonnaise sides up. 
  3. Step 3– Cook, in two batches, in a large nonstick skillet over medium heat, turning once, until golden brown and cheese is melted, 12 to 14 minutes.

Tater Tot Casserole

Ingredients

  • For tuna salad:
  • 2 (5-ounce) cans of chunk white tuna, drained
  • 1 celery stalk, chopped

  • 1/3 c. chopped fresh dill

  • 1 tbsp. fresh lemon juice
  • 1/2 c. mayonnaise
  • 1/4 c. sliced cornichons
  • 2 tbsp. pickle relish
  • 1 tbsp. Dijon mustard
  • Kosher salt and freshly ground black pepper
  • For sandwich:
  • 8 slices sourdough bread
  • 1/4 c. mayonnaise
  • 4 oz. extra-sharp Cheddar, grated (about 1 cup)
  • Kosher salt and freshly ground black pepper

Directions

  1. Step 1: Preheat oven to 450ºF. Heat oil in a large skillet over medium heat. Add onion and garlic. Season with salt and pepper. Cook, stirring occasionally, until onion is soft, 3 to 5 minutes. Add beef and cook, breaking it up with a spoon, until no longer pink, 4 to 5 minutes. Add soup, ketchup, and Worcestershire and cook, stirring occasionally, until warmed through, about 1 minute. Add green beans, peas, and corn. Cook, stirring occasionally, until warmed through about 1 minute. Remove from heat and stir in cheddar until melted. 
  2. Step 2: Transfer the mixture to an 8-by-8-inch baking dish. Cover with tater tots then sprinkle with Parmesan. Bake, on a rimmed baking sheet, until tater tots are crispy, 30 to 35 minutes. Let rest for 5 minutes before serving.

Bagel Pizza

Recipe provided by Country Living

Ingredients

  • 2 plain bagels, halved
  • 1/2 c. marinara sauce
  • 4 oz. mozzarella, shredded (about 1 cup)
  • Pepperoni, mushrooms, green peppers, black olives, cooked sausage, or other toppings, as desired

Directions

  1. Step 1: Preheat oven to 425°F. Using clean fingers, scoop a small trench out of the bagel. Fill each bagel with about 2 tablespoons of marinara sauce. Top with 1/4 cup mozzarella cheese and add toppings as desired. 
  2. Step 2: Place on a foil-lined baking sheet, and bake for 7-8 minutes, until cooked through. Serve immediately. 
  3. Step 3: To cook in an air fryer: Place bagels in the foil-lined basket of an air fryer at 400°F for 4-5 minutes. Serve immediately.
